Delicious. Very lemony, I might reduce the lemon juice by 30% next time and see if that’s nicer. If using a broiler to caramelise the top, I highly recommend watching a couple videos on temperatures and where to place the tray, because by the time mine were caramelised the custard was piping hot and almost too cooked! This is a brilliant recipe – so easy and it is quite foolproof. As with all of the recipes in the Ottolenghi cook books (buy them, they are a treat!), clearly explained and they turn out looking exactly like the photos! I do have several books including the source of this recipe, but did an internet search as I’m travelling and want to make this for my host tonight. I didn’t have any ouzo in the house last time I made it, so used Pastis, also great....

This worked well. I particularly liked the tip about roasting dry, as this enabled me to tweak the recipe to avoid the flour and breadcrumbs. I integrated some dry-roasted butternut squash and upped the flax egg. I also stuck some slices of roast mushroom and a few sage leaves on the base. Luckily, it came out of the tin cleanly, an I was left with an attractive centrepiece. Thank you....
