This simply did not work for me. I know emulsion can be a bit hit and miss but….
- The sauce did not thicken following his recipe to the letter 2. I tried again with an extra yolk but to no avail 3. Eventually put it into a bain Marie but although ok at the end was still too runny and with the butter /concentrate ratio was slightly underwhelming Will go back to more trad method next time. It\’s ironic that TH claims takes all the usual pain out of making it…..
