Introduction
Instead of forking out for a Domino’s and caking each slice in the free sauce why not save some dollar and make your own? This pizza dish embodies the SORTED ideology of social cooking more than most – everybody gets involved. Whip up some bases, throw together an array of toppings and scatter on the table for your mates to construct their own, then launch into the oven. A sure-fire way to stop giving your hard-earned cash to the local pizza joint and bring you and your friends closer together as you catch up over some DIY food.

Ingredients
| For the dough: | |
|---|---|
| 1½ tsp / 7g | dried yeast |
| ½ tsp | sugar |
| Approx 250ml | lukewarm water |
| 500g | plain flour |
| 4 tbsp | olive oil |
| 1 tsp | salt |
| For the tomato base: | |
| 1 | onion |
| 2 | cloves of garlic |
| 1 | shot of olive oil |
| 400g | tin of chopped tomatoes |
| 1 tbsp | mixed dried herbs |
| Toppings of choice |
Method
MIX the yeast, sugar and roughly a quarter of the warm water in a bowl and leave for 10 minutes.
SIEVE flour into another bowl, adding oil and salt.
POUR in the yeast mixture and enough of the leftover warm water to bind the ingredients.
KNEAD until you have a smooth dough.
COVER the dough with a clean cloth and leave the yeast to do its magic for about an hour.
PEEL and dice the onion and garlic, then sweat in a pan with the oil until translucent.
DUMP in the tomatoes and herbs and simmer for half an hour to reduce consistency.
PREHEAT the oven to 220°C.
BREAK OFF a quarter of the dough, roll out to form a thin base and place on an oiled baking tray.
BAKE in the oven for 5 minutes. At this stage you can keep the bases in the fridge or even freezer until you require them. Make a stash – a really handy supper.
SPREAD the tomato sauce to the edges of the base, sprinkle with grated cheese and your choice of topping.
BAKE for 10-15 minutes in the oven until golden and crisp.
