Introduction

These cinnamon pastry swirls are so nostalgic, so cinnamony and so delicious. Crisp, light, flaky pastry with a buttery cinnamon filling, sprinkled with sugar. Perfect with a cup of tea or coffee.

30g (1.25oz)unsalted butter, softened
3 tbsplight brown sugar (dark is also fine)
1 tspground cinnamon
1 sheetready-rolled puff pastry
1 smallegg + 1 tsp milk or water, for the egg wash
granulated sugar, to sprinkle (optional)

You will need: an air fryer.

Method

In a small bowl, mix together the butter, light brown sugar and cinnamon with a fork or spoon to make a paste.

Unravel the puff pastry and lay it out in a landscape position, then spread the cinnamon butter over the right half of the pastry and fold the pastry over the cinnamon butter, like you’re closing a book.

Slice the pastry vertically into 5 strips, then slice each strip vertically in half again, leaving just the tops still connected. Twist the two branches of a strip around each other, then curl into a swirl shape and tuck the end underneath, squeezing it together gently so it doesn’t unravel. Repeat to make the remaining swirls.

In a small bowl, beat the egg and milk or water together to make the egg wash.

Preheat the air fryer to 160˚C (325˚F). Line the air fryer rack or basket with a sheet of thick baking paper. Place your swirls in the air fryer at least 5cm (2in) apart, then brush with the egg wash and sprinkle with granulated sugar, if using.

Air fry for 13–15 minutes until golden brown on top. Leave to cool slightly and they’re ready to eat. Enjoy!

Tip: Feel free to swap the cinnamon butter for chocolate hazelnut or another spread.
