It tastes wonderful. I used two fillets totaling 280 grams as it was a test for a larger gathering and found it quite difficult to calculate the amount of sugar and salt to use. I did also start tasting it after 36 hours in the fridge. It seems to have worked well and I will definitely use it in future.
