| 4 small | eating apples |
|---|---|
| 25g | mixed dried fruit |
| 25g | stem ginger balls in syrup |
| 25g | flaked almonds |
| 25g | demerara sugar |
| 1 pinch of | ground cinnamon |
| 50g | soft unsalted butter |
| 4 small slices of | fruit bread or brioche |
| 1 x 400g tin of | custard |
Essential kit
You will need: an air fryer.
Method
Keeping them whole, use an apple corer or a small sharp knife to remove and discard the core of each apple, then use the knife to carefully score around the middle a couple of times, going almost as deep as the core.
Finely chop the dried fruit and ginger, scrape into a bowl, add the almonds, sugar, cinnamon and butter, then use your clean hands to scrunch and mix it all together really well. Poke into the apple cores, reserving the excess.
Evenly space the slices of fruit bread in the air-fryer drawer and sit one filled apple on each. Cook for 15 minutes at 160ºC.
Spoon any extra filling on top of the apples and cook for another 10 minutes at 160ºC, or until soft and golden. Serve with hot or cold custard, and enjoy.
