Introduction

Whenever I see a crinkle cookie, I immediately want to grab one and shove it in my face because they have the most wonderful flavour and texture. I’ve made them for a few years now but have never published a recipe, which is slightly unfair of me I will admit. So here you go… the requests can stop now! These beauties are fun, full of delicious chocolate flavour, and are a great go-to bake for any cookie craving. These are perfect to make with your kids because you can all get a little messy, but also, they are just so tasty you will want to get involved!

225gcaster sugar
75mlsunflower oil
3eggs
200gplain flour
1 tspbaking powder
Pinch ofsea salt
50gicing sugar

Essential kit

You will need: 2–3 large baking trays.

Method

PREP: 20 minutes CHILL: 30 minutes BAKE: 10 minutes COOL: 30 minutes LASTS: 3+ days, at room temperature.

In a large bowl, mix the cocoa powder, sugar, oil and eggs together. Add the flour, baking powder and salt and mix until a cookie dough is formed. Chill the bowl in the fridge for 30 minutes.

Preheat the oven to 190ºC/170ºC fan and line 2–3 large baking trays with parchment paper.

Add the icing sugar to a small bowl. Using a tablespoon, portion the cookies and roll each one into a ball. Then roll each one in the icing sugar. Place each cookie onto the lined trays, spaced well apart from each other.

Notes: If you just want a simple plain chocolate cookie, leave out rolling the cookies in icing sugar.

Air fry: Line the base of your air fryer with a piece of parchment paper. Cook at 160.C for 10–12 minutes. Bake in the oven for 10 minutes. Leave to cool on the trays and then enjoy.
