Absolutely beautiful dish, honestly a favourite in our house! I make a few adjustments to the recipe: – Add a bunch of finely chopped coriander stems to the onions. – replace the water with vegetable stock – replace the tinned plums with 10 fresh black plums (add the chopped plums at different stages of the cooking process, finish with the last 2-3 plums in the last 15-20 mins so they retain their integrity). – remove the sugar – stir in the bunch of coriander leaves in the last minute This has become our comfort recipe.
