Followed the recipe to the letter and it turned out perfect. 18 minutes in the oven and the pork was slightly pink in the middle (which is absolutely fine for a fillet cut). Didn’t add the full 8 tbsp of olive oil to the salsa. It was still “wet” enough. Definitely cooking this again!
