I love Meera Sodha’s recipes. This was especially delicious, although I’m not sure why the 850ml of water was needed. I didn’t add any, and I also didn’t bother with blitzing any carrots at the end. It was still fabulously soupy. First time I’ve used tofu puffs; I loved the texture. I will be adding this to my repertoire for evening meals (minus the water).
