This moist cake is topped with a delicious coffee-flavoured icing and is so quick and easy to make.Whip this cake up for afternoon tea or stick a candle in it for a speedy birthday treat!

| 2 tbsp | softened butter, plus extra for greasing |
| 1 tbsp | chicory and coffee essence |
| 2 tbsp | self-raising flour |
| 2 tbsp | soft brown sugar |
| 1 tbsp | chopped walnuts |
| ½ | beaten egg |
| For the icing: | |
| 2 tbsp | mascarpone cheese |
| 1 tbsp | icing sugar |
| ½ tsp | chicory and coffee essence |
| To decorate: | |
| 2 | walnut halves |
Essential kit
You will need: a small 300ml / ½ pint microwaveable mug and a 1000W, category-E microwave.
Method
To make the cake, lightly butter the inside of a small 300ml / ½ pint microwaveable mug. Add the butter and cook on high for 30 seconds -1 minute, or until melted. Stir in all the remaining cake ingredients and mix well.
Microwave on high for 1 minute, until risen and spongy. Allow to stand for 1 minute, then if you prefer, remove from the cup and allow to cool.
To make the icing, beat together the mascarpone with the icing sugar and chicory and coffee essence until smooth.
Spread the top of the cake with the icing and decorate with the walnut halves.
