I was on the search for a similar Christmas cake my English Grandmother made for decades, every year, in Australia. She passed a few years ago. This recipe was so similar and utterly fabulous. It was not complicated. Clear instructions. Overall, supremely flavourful and joy to bake. I used bundt tins, which made it look spectacular, by placing placed whole glacé figs and mini glacé pears, for decorating post baking. I made four, as gifts for family, and now everyone wants the recipe! My secret. I so very much miss cool weather, and English Christmas\’s, here in Australia. Thanks Nigella, for helping recreate baking memories, as this will be my go to Christmas cake for years to come.
