This is a brilliant recipe – so easy and it is quite foolproof. As with all of the recipes in the Ottolenghi cook books (buy them, they are a treat!), clearly explained and they turn out looking exactly like the photos! I do have several books including the source of this recipe, but did an internet search as I’m travelling and want to make this for my host tonight. I didn’t have any ouzo in the house last time I made it, so used Pastis, also great. Depending on what the garden is producing, you could also use different tomatoes (ex. cherry tomatoes cut in half).
