I agree, no butter in the recipe? Texture was really weird, solid and chewy. Also the cake itself could have done with some mango or coconut flavour. I won’t be making again. Shame. See more

I was on the search for a similar Christmas cake my English Grandmother made for decades, every year, in Australia. She passed a few years ago. This recipe was so similar and utterly fabulous. It was not complicated. Clear instructions. Overall, supremely flavourful and joy to bake. I used bundt tins, which made it look spectacular, by placing placed whole glacé figs and mini glacé pears, for decorating post baking.
