Introduction
Turkey brings some variety to the table, plus it is lean, low-fat and budget-friendly. If you ever fancy a change from minced beef for other recipes, then try subbing in turkey. This recipe can be served with jacket potatoes, or brown rice and a crunchy salad.

Ingredients
| 1 tbsp | olive oil |
|---|---|
| 1 | onion, halved and finely sliced |
| 1 | carrot, peeled and finely chopped |
| 2 | celery sticks, finely chopped |
| 1 | courgette, trimmed and finely chopped |
| 2 | garlic cloves, crushed |
| 1 small bunch | coriander, leaves picked and stalks finely chopped |
| 1 heaped tsp | smoked paprika |
| 500g / 1 lb 2oz | minced turkey |
| 1 x 400g / 14oz can | chopped tomatoes |
| 1 x 400g / 14oz can | kidney beans, drained |
| 1 x 400g / 14oz can | cannellini beans, drained |
| sea salt and freshly ground black pepper | |
| jacket potato, brown rice or crunch salad, to serve |
Method
Heat the oil in a large pan over a medium heat, then add the onion, carrot, celery, courgette, garlic, stalks from the coriander and smoked paprika and stir to combine. Fry the vegetables for 10 minutes, stirring continuously until softened and starting to caramelize.
Add the minced turkey to the pan and continue to cook for 5 minutes, stirring to break down the mince with a wooden spoon until browned. Add the chopped tomatoes, then carefully fill the can with boiling water and tip that in also. Tip in both types of beans and stir the mixture to combine. Bring the chilli to the boil, then reduce to a simmer, cover with a lid, and leave to cook for 20 minutes, removing the lid for the last 5 minutes of the cooking time.
Season the chilli to taste, then stir through the coriander leaves, spoon into serving bowls and serve with your choice of accompaniments.
For first-stage weaning: Blitz a small portion of the chilli to a purée and serve with some rice on the side.
For older children: The spicing in this is delicate, so this can easily be enjoyed as it is by children of all ages.
