I’ve made this several times, always a hit. Totally delicious and easy to make. Great to take along to a pot luck dinner. Agreed that it’s lovely with soup or just warm with butter, on its own or as an accompaniment to other dishes. It works with other types of hard cheese if you don’t want to use parmesan and I’ve made it with wholewheat flour (I think that was what it was anyway!) when I didn’t have any spelt.
