Probably not my finest choice for dinner for guests who I didn\’t know well. I live in the interior of Canada and so had to buy much of the fish in its frozen form. And had to defreeze the fish in cold water. That all went well except the fish was wetter than I expected. I had to buy a whole octopus which was an interesting exercise, as I had never skinned one before. \”Prepared squid\” wasn\’t available. The cooking process was pretty straightforward. (How much is a splash of stock?) With all the prep work this was not a quick dish to cook. The upside was that the guests thought the dish was wonderful. And we still had about 40% left over …for tonight.
