Introduction
This is my go-to recipe if I’m feeling a little under the weather. There’s something about it that is just so comforting. It also freezes well, so you can have a little pick-me-up to hand for whenever you need it.

| 8 | boneless, skinless chicken thighs, cut into small chunks |
|---|---|
| 2 litres | chicken stock |
| 1 | onion, finely chopped |
| 2 sticks | of celery, finely chopped |
| 2 | carrots, finely chopped |
| 1 | bay leaf |
| 1 x 200g tin | of sweetcorn, drained and rinsed |
| sea salt and freshly ground black pepper | |
| To serve: | |
| a handful of | fresh parsley leaves, chopped |
| crusty bread |
Essential kit
You will need a slow cooker.
Method
COOK 8 hours on low
Put all your ingredients, apart from the sweetcorn, into your slow cooker, then season and stir well. Cook on low for 7 hours.
Add the sweetcorn and cook for a further hour.
Serve scattered with fresh parsley, with some buttered crusty bread on the side.
